Rebuild 360 - already started - where to finish?

Been working on 1972 Ford 250 with 360 and ~73,000 miles. Have installed Edelbrock Performer intake with Edelbrock 600 cfm 4-bbl carb, reworked top-end to fix valve leaks and install hardened seats, Tri-Y headers with 3" single exhaust, Pertronix electronic ignition.

I have been looking at a lot of information, lots of opinions but am trying to find a resource that provides a probable Hp and Torque curve for various builds. What I would like to get to is a fairly fast, yet strong, Ford FE. I am considering a small stroker kit as I believe cylinders are all in very good shape and would not need to bore (could be talked into it though). Could also just go with straight conversion to 390. I would like to get compression up to about 10:1, have looked at Edelbrock 2106 cam. I will eventually install new overdrive from gear vendors for the C6 tranny.I do not plan to race, nor will it be a daily driver. Looking for excellent low-mid range torque to be quick off the line while not stumbling at high RPM's, you know, for those "special" street occasions. Thoughts anyone?

390 Crank / rods with your pistons would net a higher compression car 390. Mild cam and 3.50 gears should work well without needing the overly expensive overdrive conversion.

Went with Eagle stroker kit and Comp cam hydraulic roller cam - got it running this weekend.
